My favorite language instruction program is from Rosetta Stone.  It teaches language in much the same way as a child would learn it as a native-speaker.  Pictures relate to words in building a vocabulary, then begin to link together in phrases and sentences gradually and very naturally.  The Rosetta Stone method uses spoken and written words, along with photographs, so the student absorbs sound, pictures and writing simultaneously.

I have also just become aware of Praxis Language. They currently have five language pods to choose from: ChinesePod, EnglishPod, FrenchPod, ItalianPod and SpanishPod. These seem to be short, fun podcasts designed to teach conversational language, as well as giving in-depth information on correct usage, pronunciation and meaning of key words. The young presenters (one an English-speaker, the other a native-speaker of the chosen language) keep each lesson light and fun, while delivering a wealth of knowledge.
